Colombia - Luz Helena Salazar Gesha

Violet + Blueberry + Nectarine + Lime + Brown Sugar **150 grams of roasted coffee per bag for this selection. Luz Helena is one of our oldest producer partnersdating back to our first year operating in 2020! This is the third season we have worked with her coffees after a bit of a hiatusand the first time we have purchased her washed Gesha. This coffee is such a delight and complexity on the palate. Purple florals reminiscent of violet and lavenderblue/purple berriesripe nectarinelime zestand a lingering brown sugar-like sweetness. We have a small amount of this coffee so get it while its here! Ecuador - Chito Mejorado (Extra Light)

Ecuador - Chito Mejorado (Extra Light)

Strawberry Pastry + Red Jell-O + Kool-Aid + Red Grape + Mango **This is an extra light roast profile on Chito Community's natural Mejorado. We recommend allowing 3-4 weeks of rest time for optimal results. **150 grams of roasted coffee per bag for this selection Region: ChitoZamora Chinchipe Source: Cafexporto (Juan Peña) Variety: Mejorado Process: Natural Harvest: Summer 2024 Altitude: 1600 Meters In our first season working with coffees from Juan Peña’s Cafexportothe lots from Chito community were some of our most desired to begin working with. We have tasted multiple seasons of the Chito community's Mejorado lot from various roastersand it always stood out wonderfully - even next to the highly sought after La Papaya Mejorado. And interestingly enoughthe Mejorado trees from this Chito Community lot are directly descended from Hacienda La Papaya. This coffee's '90s nostalgia vibes couldn't be any higher. We were perplexed upon examining this coffee to find that it tasted exactly like all of the listed notes above. We don't often feature naturalsbut this one truly surprised us and we are so glad all of you like naturals so much because otherwise we would have missed an absolute bomb. A core of Thankfully's values in operating as a roastery is to bring more coffees to market that are maybe less sought afteror from producers who are just less known by specialty buyers. You can see this playing out in many of our purchasing choices from various origins. We were thrilled for the opportunity to buy this natural process Mejorado from the Chito community this season!

Daniel Hernandez - Chiroso

Daniel Hernandez - Chiroso

Farm: El Tigre Region: UrraoAntioquiaColombia Sourced Through: Unblended Coffee Harvest: Jan 2024 Altitude: 2000 Meters Variety: Chiroso Process: Washed Processing Details: Coffee is first carefully hand picked and sorted using flotation; where undesirable cherries float and are separated out from the others. The coffee then undergoes a 24 hour fermentation in cherry. The coffee is then depulpedwashed and dried until desirable moisture content is reached. What we taste: Daniel’s Chiroso is one of our favorite expressions of the variety that we’ve had to date. Firstly we notice a really vibrant juiciness like tangerine. What we have come to associate as the “classic” Chiroso rich mouthfeel is absolutely presentalong with a slight red fruit aspectall of which together reminds us of strawberries and cream.
